Michael A. Grusak

USDA-ARS Edward T. Schafer Agricultural Research Center

Research Interests

Dr. Grusak’s research program is focused on: (i) understanding ways to enhance the nutritional quality of plant foods for human or animal consumption; (ii) how mineral nutrients are acquired from soil and transported throughout plants to edible tissues; (iii) translating this fundamental knowledge, through working with breeders, into strategies for developing nutritionally-enhanced food crops, including legumes, cereals, root crops, fruits and vegetables; (iv) working with food industry stakeholders to develop commodity-derived ingredients for use in the US food supply; and (v) contributing to clinical investigations to study nutrient bioavailability from plant foods in humans. Dr. Grusak’s role as Research Center Director is to facilitate solving problems that will help farmers produce a safe, nutritious, and sustainable food supply.
